Nom Nom Nom

Since I'm off my feet this week, I figure it's a good chance to experiment with some new recipes.  I quickly cobbled together some ideas I had been saving at work yesterday, and headed to Whole Foods after work for some power shopping.  (On my foot for only 25 mins... go me!)

First up last night was seared fresh Diver Scallops with some grilled veggies from the salad bar at WF.  It was my first time successfully searing something (the smoke alarm only went off twice!)



Lunch today was a new obsession - Amy's Vegetarian Californian Burgers.  I microwave one, slap it onto a toasted Sandwich Thin w/ some romaine lettuce & soy sauce and chow down.  The burgers are kind of high in sodium, but they are great when I don't have leftovers to bring to work with me.  I also had a Chobani - it's like ice cream right out of the fridge.




Up tonight is Bruschetta Burgers - 97% lean beef topped with basil, mozzarella, tomato, and basalmic.  The side will be grilled asparagus (my favorite!).  I'll likely skip the bun because I already had a sandwich thin at lunch.

I had commented before on trying to eliminate sugars + processed foods.  I'm still trying, but have had crazy carb/bread cravings for the last two weeks.  I've brought sandwich thins in to help in that area - at least they are HFCS free?

  1. I like sandwich thins! Your food looks and sounds yummy. I wish I liked scallops and such but I am a picky seafood eater. That may have to do with the fact that we just don't get a whole lot of good stuff here in TN. lol
